Healthy Appetizers and Sides

Ingredients:

3-4 chicken boneless, skinless chicken breasts
1 cup cooked brown rice
1 can black beans, drained
1 can corn, drained
1 can Rotel tomatoes
Scoop guacamole or medium sized avocado
1 cup fat-free cheese

Preparation:

Preheat oven to 350

Boil chicken in water until cooked throughout, about 20 minutes. Cut chicken into cubes or small pieces.

Sitr all of the above ingredients into a large, oven-safe, Pyrex dish or bowl and top with fat-free cheese.

Bake for 10 minutes or until cheese melts.

Top with sliced avocado or a scoop of guacamole.
